  • 2 white fish fillets (sea bass or cod)

  • 2 ripe tomatoes, chopped
  • ½ cup olive oil
  • Juice from ½ lemon
  • Salt and black pepper, to taste
  • Optional: a pinch of chili flakes
  • Fresh parsley and mint, for garnish

Instructions

  1. Prepare the eggplants
    Slice the eggplants in half lengthwise and scoop out a little of the center to create room for the filling. Lightly fry them in olive oil until softened and golden. Place them in a baking dish, cut side up.
  2. Make the filling
    In a pan, sauté the onion and garlic in olive oil until fragrant and translucent. Add the ground meat and cook until browned. Stir in the chopped tomatoes, lemon juice, salt, pepper, and chili flakes if using. Let the mixture simmer for 10–15 minutes until it thickens and the flavors meld.
  3. Stuff and bake
    Generously fill each eggplant half with the meat mixture. Add a splash of water to the baking dish and drizzle the remaining olive oil over the top. Bake at 180°C (350°F) for 35–40 minutes, until the eggplants are tender and the filling is bubbling.
  4. Serve
    Let the dish cool slightly before garnishing with fresh parsley and mint. Serve warm with crusty bread, rice, or a dollop of yogurt.

3. Cold Yogurt, Cucumber & Garlic Soup
